A visit to this winery makes for a relaxing time where you can enjoy a bottle or tasting of high-quality wine at the very location of where it was made.
About Hawk’s Shadow Winery
Doug and Carol bought the ranch in the northwest area of Dripping Springs in 1989. They knew it was a special place and happily went to work in clearing, building, and working the land. By 2003, a friend built their home on the ranch’s hilltop that overlooks what eventually became the first vineyard site.
The family planted their first grape vines in the mid-1990s, but it didn’t flourish in the Texas Hill Country soil. They learned from the experiment and after preparing the land properly, decided to try again in 2004. At that time, they formed Hawk’s Shadow Vineyard LLC, named after their yearling horse. This time, the vines thrived despite the unforgiving, rocky limestone hilltop.
By 2009, they finally had their first harvest and sold the first grapes to a local winery, which turned them into great wines. This success compelled them to start the winery Hawk’s Shadow LLC in 2010. After producing their first vineyard on unforgiving soil, they found another location with a wonderful landscape and realized their vision of a gravity-flow winery with an underground cave-like cellar in 2014.
They expanded the facility to include more winery space, a tasting room, and an underground barrel center.
Visit Hawk’s Shadow Winery
The winery is open by appointment from 11 am to 5 pm on Mondays through Thursdays. On Fridays through Sundays, their hours are 11 am to 6 pm. You have a choice of two tasting options as well as a Winemaker Experience that includes a winery tour and barrel tasting. You can explore HSV wines, which include red and white varieties.
