Living in Dripping Springs puts you near many wineries and distilleries. It’s like having a little bit of Sonoma right here in Texas Hill Country. Founded by Daniel Barnes, Treaty Oak Distilling is a distillery named after a 500-year-old tree in Austin. Under that tree, Stephen F. Austin signed agreements to define the borders of Texas.
The rustic and charming property is on a 28-acre ranch called Ghost Hill. Many couples have their weddings here and it’s easy to see why.
Treaty Oak Spirits, Wine, and Beer
Specializing in spirits, it’s the fourth distillery to operate in Texas. Barnes and his team have been honing and experimenting with ingredients and distilling techniques. They continue to seek better ways of turning ideas into flavor. They call their gins Waterloo in honor of Austin’s original name.
Treaty Oak focuses on creating the best spirits in Texas. But they also have a wine portfolio of red, white, and rosé varietals sourced from the Texas high plains. In 2019, Treaty Oak debuted its own wine label sourced from Kuhlman Cellars down the road in Stonewall, Texas.
They’ve also dipped their toes into brewing beer. Since they’ve been refining their spirits, they couldn’t help but take on the challenge of a new medium in beer. The result of their trial and error is Treaty Oak Brewing Co.
The company cares about our planet. They’ve hired a specialist to assess their operations to increase efficiency of the water and energy use, reduce their carbon footprint, and verify responsible sourcing of raw materials.
Alice’s Restaurant and Treaty Oak Market
While tours are temporarily suspended, Alice Restaurant remains open. Inspiration for the food comes from the world around the restaurant. The restaurant uses locally sourced ingredients to tell the story of Texas.
Treaty Oak Market sells fresh grocery items and provisions. Both the restaurant and market offer dine-in, takeout, and delivery. You can get cocktails and award-winning spirits to-go.
The bar features beers, tapped drinks, cocktails, and experimental whiskeys from the distillery. Of course, all cocktails contain only Treat Oak spirits and fresh ingredients.
Rickhouse Cocktail Bar
In a separate space, the open-aired Rickhouse cocktail bar serves up craft beers, cocktails, and tastings of Treaty Oak spirits. You can gather with friends at the rows of picnic tables or catch up with old friends in the more intimate lounge areas.
Treaty Oak Distilling has live music most weekends and a playground for kids. Leashed dogs are welcome. Check the website for the current guidelines and to find out what’s open.
